walnut and date cake


Based on Women’s Weekly “old fashioned favourites” orange cake recipe:
3 large eggs
150g butter
2/3 cup Raw sugar
1 tbspn Orange zest
1 1/2 cup Self Raising flour
1/4 cup kefir or milk
1/2 cup dried dates (seeded, halved and soaked for several hours)
1/2 cup walnuts ( chopped and soaked for several hours )

Grease and line 20 cm round cake pan. Preheat oven to 180 C.

Cream butter,sugar and orange zest. Add eggs. Fold in flour and milk, then fold in drained dates. ( Mixture should be very soft – adjust with a tablespoon of the date water ) Spoon into tin and sprinkle with drained nuts.

Bake for 40 mins. Cool in tin covered with foil to preserve moisture.
Storage airtight container. Can be made 4 days ahead. Suitable to freeze.
